Jamaican Jerk-Spiced Chicken

This is a very quick and delicious recipe to add to your adventure bag. The marinade is quick to make and you can have the chicken marinated and ready to go by the time you hit camp. All you have to do it throw it over an open fire, steam up some rice and top it with your favorite salsa and you’ve got a bright, flavorful and slightly spicy feast! This is a great summertime recipe with all of its bright flavors, but equally enjoyable all year round sitting next to a fire with some good company.


  • 4 Green Onions
  • 1 Small nub of Ginger
  • 3 Garlic Cloves
  • ½ medium Yellow Onion
  • 1 Jalapeno
  • ½ tsp Dried Thyme
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Vegetable Oil
  • ½ C Brown Sugar
  • 1 Tbsp Ground Allspice
  • 1 tsp Cinnamon
  • 1 Tbsp Nutmeg
  • 1 Lime, juiced
  • 4 Chicken Breasts


  1. Throw all ingredients except chicken into a blender and puree until smooth.
  2. Pour over chicken and marinate at least 8 hours.
  3. When ready, cook over an open fire, in a big fry pan or in an oven until internal temperature reaches 165 degrees Fahrenheit. Make sure to take spoonful’s of the marinade and place it on the chicken when you start to cook it!
  4. Serve with your favorite mango or pineapple salsa and a side of rice!
