If you have been to the Overland Expo West’s Sunday Walk About tradition, you may have had the famous “Fat Bastard Pancakes”.   The name comes from our Crew member, Ige Gustavson, who’s heavily-built FZJ80 Land Cruiser is aptly named Fat Bastard.

Enjoy with traditional maple syrup, or pair these pancakes with a delicious Caramel Topping.

Ingredients
Dry Ingredients
Wet Ingredients

Instructions
  1. Combine all wet ingredients in a bowl and whisk until mixed.
  2. Add dry ingredients and whisk just until combined.
  3. Cook on griddle set to 350 degrees until lightly browned on both sides.
  4. Top with apples and caramel sauce, or white chocolate chips and peanut butter cream.
